Lexington Barbecue Lexington NC

They only use pork shoulders at this place and are cooked about nine hours over hickory and oak coals. They salt the meat before cooking and do not baste. They say this the true Lexington Style Barbecue. I found that most bbq joints served chopped pork with vinegar pepper sauce and hush puppies for the most popular side.
